A Calling:

Tracy is due in a month! Woohoo!

She is cooking this month (thank goodness for that nesting impulse... it is useful) in order to be prepared for the long 2 months after baby is born when no one will be willing or able to cook. She needs some recipes that "freeze beautifully." Whatcha got?

  1. I fear that I have no ideas here other than chili and spaghetti as I do not freeze much and it is about to be summer. :( Sorry and good luck, Tracy!

  2. I have plenty of frozen pasta dishes.
    Boil some penne or ziti in salty water.
    Brown your favorite italian sausage, spicy or not, and drain.
    Mix together with your favorite pasta sauce and plenty of mozzarella and parmesan cheese.

    Eat some for lunch and freeze the rest. If you make the entire box of pasta, it makes 8 servings at least. I have also added chopped spinach, mushrooms, and artichoke hearts on different occasions, if any of those sound good go for it!

    I also freeze a lot of soups since they make so much. Seems like anything I make in a stock pot grows to an impossible size :)

    My favorite is chicken noodle:
    2 boxes of Imagine Organic chicken stock (best tasting by far if you can find it)
    onion
    celery
    carrots
    diced white meat chicken (pre-cooked with your favorite seasoning)
    bag of whole wheat egg noodles

    Saute diced veggies in some olive oil in bottom of large stock pot until onions are translucent. Add cooked chicken and 2 boxes of broth. Bring to a simmer and add egg noodles any amount to your liking.

    This makes a tasty soup, I think it's all in the Imagine brand broth personally, but it goes together quick, freezes great, and makes a ton!
