What's for Dinner? Want something quick?

Grilled Halibut (or mild white fish) with Lemon Vinaigrette
Serves 1 so double, triple, etc

7 oz halibut filet
1/2 cup fresh or frozen green beans
1/2 cup fresh or frozen broccoli
1/2 cup fresh or frozen cauliflower
salt and pepper to taste


Vinaigrette:
2 tsp lemon juice
2 tsp olive oil
1 tsp chopped capers
3/4 tsp chopped shallots or green onion (or I've used red onion)
salt and pepper to taste

Combine all ingred for vinaigrette in a small bowl and whisk.
Cook fish on barbeque grill or coat a non-stick pan with cooking spray and heat over med heat. If desired, sprinkle fish with S&P on both sides and lay on grill pan. Cook 3-5 minutes on each side or until thoroughly cooked.
Steam beans, broccoli and cauliflower.
Spoon vinaigrette onto fish. Serve with steamed veggies.

  1. We are absolutely having this for dinner tomorrow. Does it ruin it if I make mashed potatoes and serve french bread with it? (just kidding)

  2. We had this for dinner last night and it was delicious. Even the kids couldn't get enough. Ella's eyes were bugging out over the broccoli, and Andrew kept swiping fish off my plate. We made it with Tilapia that I baked in the toaster oven. Gail, you will be proud, I skipped the bread and potatoes and served it with Andrea's butternut squash and chard sautee. I roasted the squash and tomatoes in the oven and then threw the chard in to wilt. A little of the vinaigrette on the sautee was AMAZING. Make this.
